Ingredients
- 1½ cups cucumber, finely diced or thinly sliced (about 2 small cucumbers)
- 1 cup lactose free plain yogurt
- 1 tbsp garlic infused oil
- 1 tbsp fresh lemon juice
- 1–2 tbsp green onion tops, finely sliced
- 1 tbsp chopped fresh dill or mint
- ¼–½ tsp salt, to taste
- Pinch black pepper
Instructions
- In a bowl, whisk together the yogurt, garlic infused oil, lemon juice, salt, and black pepper until smooth.
- Add the cucumber, green onion tops, and fresh herbs if using.
- Mix gently until evenly combined.
- Chill for 10–15 minutes before serving for best flavour and texture
Tips
Use firm cucumbers and remove excess seeds if they are very watery. Add herbs just before serving to keep the flavour fresh. For a thicker salad, strain the yogurt briefly before mixing.
