Chicken Burger

Juicy homemade chicken patties seasoned with warm spices and herbs, creating a soft and flavourful burger that works well in a sandwich or lettuce wrap.

Makes: 5 patties • Prep Time: 10 minutes • Cook Time: 10–12 minutes

Ingredients

  • 450 g ground chicken
  • ¼ cup finely ground gluten-free breadcrumbs (or sourdough crumbs)
  • 2½ tbsp mayonnaise
  • 1 tbsp garlic infused oil (plus 2 tsp more for cooking)
  • 2 tbsp green onion tops, finely chopped
  • 1 tsp smoked paprika
  • ½ tsp ground coriander
  • ½ tsp yellow mustard or Dijon mustard
  • ¾ tsp salt
  • ¼ tsp black pepper

Instructions

  1. In a bowl, gently mix the ground chicken, breadcrumbs, mayonnaise, garlic infused oil, green onion tops, smoked paprika, ground coriander, mustard, salt, and black pepper until just combined. Avoid overmixing.
  2. Let the mixture rest for 5–10 minutes so the ingredients bind together.
  3. Divide the mixture into 5 equal portions and shape into patties. Press a slight indent in the centre of each patty.
  4. Heat a pan over medium-low heat and add 2 tsp garlic infused oil.
  5. Cook the patties for 5–6 minutes per side, until golden and fully cooked through.

Tips

Avoid overcooking the patties, as chicken can dry out quickly. Cooking over medium-low heat helps keep the texture tender and juicy.

Serving Suggestions

Serve the chicken patties in sourdough or any bun of choice, or wrap them in crisp iceberg lettuce. Add toppings such as lettuce, cucumber, and lactose-free cheese. They pair well with roasted potatoes, fries, or a simple salad.
